Cépage

March 6th, 2009
The buzz: Frenchfine-dining establishment Les Amis from Singapore—named one of theworld’s 100 best restaurants by Restaurant Magazine—has opened itsfirst overseas restaurant in a three-storey building in the Star Streetarea.
The décor: Understatedluxury. There’s a bar with plush sofas on the ground floor while thedining rooms are upstairs. All floors feature handpicked vintagechandeliers from Europe and although the total floor area is more than7,000 square feet, there are only 56 seats for dining to ensure maximumprivacy.
The food: Les Amis’s executive chef Thomas Mayrrelocated to Hong Kong, along with the restaurant’s signature dishes, such as egg confit in truffled oxtail gelee. However, his new tenure atCepage means that he’s able to experiment more and introduce newcreations to Hong Kong. He specializes in French-Mediterranean faremade with the freshest ingredients. A must-try is the succulent Alaskanking crab leg with caviar, avocado and green apple. But be sure tosavor it—this starter rings in at $480.
The wine: Cepages’s wine list is 83 pages long, andits two wine cellars stock more than 8,000 bottles from the old and newworld—the most expensive coming in at $159,000. Wine pairing isavailable, but if you’re a wine buff, why not pick out a bottle and letthe restaurant choose the dishes for you instead?
The crowd: Since its official opening a couple ofweeks ago, Cépage has become a bit of a tycoon’s canteen. So look twicewhen you brush elbows there.

Why you’ll be back:
Because everyone wants to live the high life sometimes.
